Product Details
White to off-white flakes, odorless, insoluble in water, acid, alkali and organic solvents. Often used as a thickener and stabilizer in foods. Chitin can be used as a thickener in noodle making and as an emulsifier in ice cream. It can also be used in juice and fruit wine to prevent discoloration and remove astringency.
